Mint Lemonade

This lemonade is one that reminds me of my family vacations back home. When I first ordered it at a cafe, I was a little worried to try a green lemonade with a soap like froth. The minute I tried it was the minute I fell in love. It is so tangy and frothy. The mint adds a light color and crisp flavor to the lemonade. When it is first blended it's a creamy white color, but after you pour it the white settles as a froth on the top with the minced mint leaves and the light green lemonade sits at the bottom. This is a great summer time refresher, and is really easy to make. However, I do suggest you serve it as soon as you make it or the mint will wilt a little at the top and it won't taste as great. But overall, it is a flavorful drink that is really simple to make!

Ingredients:

1 Cup Hot Water
1 Cup Sugar
2 Cups Cold Water
1 1/4 Cup Lemon Juice
1 Cup Mint Leaves
20 Ice Cubes

Directions:
In a small saucepan boil the hot water with the sugar. The sugar will dissolve into a nice syrup. Allow this syrup to cool briefly.
In a blender, blend the cool syrup, lemon juice, and water till mixed. Add the fresh mint leaves and puree until the mint is extremely fine. Finally, add the ice cubes and blend till smooth.
Pour the lemonade into cups by filling each cup halfway first, and then filling all the cups until full. This way they will all have an even amount of foam. Garnish with a mint sprig and a thinly sliced lemon. Serve immediately.
